Kiwi-Lime Pork Ribs



Another delicious recipe from my favorite website!

I think my family was a bit skeptical about this recipe, but they LOVED it! and best of all it was super easy!!

Madison wanted me to pair this with coleslaw, but I didn't get out to the grocery early enough to make the slaw. Also, I really felt with the sauce in this recipe would be too much sweetness (hard to believe I just typed that - can there be too much sweetness??). So, I opted for sauteed garlic baby spinach with mashed potatoes, and it was a winner! The flavors paired perfectly!

Because I can't leave well enough alone, I did adjust some of the seasonings in this recipe to suit our tastes


Ingredients

  • 2 kiwis, peeled and sliced
  • 1/2 cup white sugar
  • 2 tablespoons cider vinegar
  • 2 tablespoons lime juice
  • 2 teaspoons salt
  • 1 tablespoon chili powder
  • 2 tablespoons cornstarch
  • 1 clove garlic, minced
  • 1 (3 pound) package country-style pork ribs

Directions

1.
Preheat oven to 400 degrees F

Blend kiwis, sugar, vinegar, lime juice, salt, chili powder, cornstarch, and garlic in a blender until thickened into a sauce. Be sure to taste it and adjust the seasonings to your liking.
3.
Place pork ribs in a baking dish. The sauce will increase in volume, so be sure you use a baking dish with some depth.
4.
Drizzle blended kiwi sauce over ribs.
5.
Loosely cover ribs with a sheet of aluminum foil.
6.
Cook in preheated oven until pork reaches 140 degrees F. Check the temp around 45 minutes and remove when up to temp. Let rest for at least 5 minutes.

Sauteed Garlic Spinach on Mashed Potatoes was a happy accident! One night while cooking dinner, I was planning to pop some frozen veges into the microwave until I went to the freezer and couldn't find my veges!!


OH NO what to do?! I couldn't just serve the meat and potatoes without a vege! That wouldn't be right! Right?

I had to think fast - pretty much everything was ready to go! Then the light bulb went off - I had a bag of spinach! But how will it pair with mashed potatoes? That just sounded weird to me, but whatever, I was desperate. No time to get picky now!

Spicy Ginger Chicken Wings


Winner Winner Chicken Wing Dinner!!



These are really yummy!
The sauce is oh soooo good!


I did make some changes to the recipe as follows

Ingredients
  • 3 pounds chicken wings
  • 2 eggs, beaten
  • 1 cup all-purpose flour
  • 1/4 cup butter
  • 1/2 cup apple cider vinegar
  • 3 tablespoons soy sauce
  • 3 tablespoons water
  • 1 cup brown sugar
  • 1/2 teaspoon salt
  • 3 serrano chile peppers, seeded and minced
  • 1 tablespoon grated fresh ginger

Directions
Preheat an oven to 350 degrees F


Blot chicken wings dry with a paper towel
Beat the eggs in a bowl, and place the flour in another bowl. Dip chicken wings into the egg, then into the flour to lightly coat, shaking off the excess


Melt the butter in a large skillet over medium high heat.


Pan fry the chicken wings until well browned on all sides, about 8-10 mins total (I had to do mine in 2 batches, and there was enough fat in the pan I did not need to add more butter for the 2nd batch


Meanwhile, gently boil the cider vinegar, soy sauce, water, brown sugar, salt, serrano chile peppers, and ginger in a saucepan over medium heat until thickened, about 15 minutes. Reduce it down until thickened and the sauce tastes amazing! adjust the seasonings for your tastes. You might like more ginger for sweetness or more peppers for spicy - it's up to you!


Toss the browned chicken wings in the sauce to coat, then transfer the wings to large baking dish with a slotted spoon. Reserve remaining sauce.


Bake in the preheated oven until the chicken is no longer pink in the center, about 30 minutes, rotating and basting with the reserved sauce after 15 minutes

NOTE:  The sauce is the star of this recipe, and I feel I could have reduced it down even more for a more intense flavor!

Memaw's Lemon Sunshine Cake


This cake was very easy to make!!


It is moist and delicious



and beautiful too!
This makes a great summer dessert that will impress your friends and family!
it goes fast, so don't expect it to last long...


Ingredients
1 (18.25 ounce) package lemon cake mix
1 (3 ounce) package instant lemon pudding mix
1/2 cup sugar
4 eggs
1 cup peach nectar
1/2 cup vegetable oil


For the Glaze
2 cups sifted confectioners' sugar
1/4 cup peach nectar
1 tablespoon lemon juice
1 teaspoon grated lemon peel




Directions 

  1. Preheat oven to 350 degrees F
  2. Spray and flour a 10-inch Bundt pan - fluted
  3. Beat lemon cake mix, lemon pudding mix, sugar, eggs, 1 cup peach nectar, and vegetable oil in a bowl with electric mixer on medium speed until mixed. Pour batter into prepared cake pan. Bake in preheated oven until a toothpick inserted into the middle of the cake comes out clean, about 50-55 minutes. Cool cake in the pan for 15 minutes before removing cake to finish cooling on rack.

Glaze


  1. Mix confectioners' sugar, 1/4 cup peach nectar, lemon juice, and lemon peel in a bowl to make a smooth frosting. Place cake on a serving platter; poke holes in top of the cake with a fork. Pour frosting slowly over the cake, allowing frosting to soak into the holes and drizzle down the sides of the cake.

allrecipes.com Allstar Trip Day 5



 July 28th, 2012
This was our last day in Seattle, and we lounged in bed a little longer than we had planned.  Once we rolled out of bed, we checked out of the hotel and left our luggage with the bellhop so we could do some more sightseeing. We flagged down a cab and headed to the Freemont district of Seattle (that was our first cab ride ever!! and probably our last!!)  So what is in Freemont you ask??  Well, a Caribbean restaurant of course!  It's all about the food!  Paseo Caribbean restaurant is a hole in the wall type of place that always has a line down the street! We seem to gravitate to these types of places! 

The cab took us right up to the restaurant and when I say "up" I mean it. There was a big hill I was happy we didn't have to climb on foot!!  So I guess paying that taxi fare wasn't so bad after all!  I think I would have paid $100 to NOT have to climb UP that hill!!

We got in the long line and waited with everyone else on the sidewalk - I think we got there just in time for the lunch rush! The place was packed. When we got close enough to be inside the building, we noticed they had a couple of tables inside - all were full though.  We did get lucky and snatched up a table! As soon as someone left, I went and sat down while Madison continued to hold our spot in line and place our order - we make a great team!!

I ordered the Caribbean Roast which is marked as the "Most Popular" on the menu - I thought that might be a good choice and boy was I right - it was tasty, but so big I couldn't finish it all.  The fresh cilantro, yummy aioli, jalapenos, and those marvelous caramelized onions paired perfectly with the succulent morsels of pork marinated in Paseo's special sauce.  All of this on a freshly made toasted baquette - yummmmmmmmmm  I wish we had thought to take a picture!

Madison ordered the Paseo Press minus the banana peppers - which caused the order taker to let out a gasp! and ask her "are you sure?" haha  She was sure! and she loved it!  In addition to pork, her sandwich had ham AND cheese on it!!  It sure looked yummy.  We were happy to have found such a unique and tasty place to enjoy our lunch!

After lunch we needed to work off some of those calories, so we decided to walk around the Freemont area. Freemont is a funky, creative neighborhood with, seemingly, something interesting around every corner!  We headed down the steep hill and made our way to the Aurora Bridge. Under the bridge lives the Freemont Troll

The Freemont Troll is a humongous sculpture as you can see from the picture! Notice the VW Bug the troll is crushing under his massive left hand - the artist  used a REAL car!!  This was a great spot for a Mads on Things photo!!



Walking down another hill under the Aurora bridge we made a right at the end of the road and made our way in the direction of the Freemont Bridge.  Along the way we came across a statue of a clown - it had lots of flowers at the base of the statue and signs of love.  The statue was of the beloved J.P. Patches - a legendary clown who had just passed away the week before.  Patches was well loved and known by all in the Puget Sound area.  What a special memorial they have to remember someone who brought joy to so many folks over the years!

Just past the Patches statue, we came upon the Interurban Statue - This is an interactive piece of artwork that commemorates the light rail that used to connect the city of Seattle with all of its surrounding neighborhoods.  The statue depicts 5 people and a dog under a shelter. The statue is frequently dressed up and has attracted the imagination, mischief and creativity of  hundreds of neighbors each year.





At this time we saw the bus going back to downtown, so we made our way across the street to the bus stop and hopped on a city bus (another first for us).  We weren't quite sure how to go about paying for the bus, but the bus driver was so sweet and helped us figure it out. It sure was a lot cheaper than taking a cab back to the city!  On our way back, we went over the Freemont Bridge and saw the neon Rapunzel in the window of the bridge's tender tower.

Back in downtown we made our way to the new City Target to buy me some flip flops! My feet were hurting!! After getting me into something more comfortable, we made our way back to Pike Place Market to do some more exploring.

We ended up at Steinbrueck Park where we saw a man with a chainsaw! Of course we were intrigued and went to check it out!


Turns out this was a street performer - The Chainsaw Juggler! and he was just getting ready to start his show.  We have never seen a street performer quite like this before, so we stayed to watch the show. He was hilarious and amassed quite a nice sized crowd!

and he made fun of his volunteers mercilessly! It was a lot of fun and a great show - I am glad we hung around to watch it, even though we missed going on the ferry to Bainbridge.

By this time we had to head back to the hotel to pick up our luggage and get on over to the allrecipes.com office for the BBQ.  We met up with our buddy from Tampa, Angela, and walked over to the bbq together.






It was quite a nice spread with pulled pork, vege patties, potato salad, coleslaw, chips, you name it!  We didn't go hungry that is for sure.  Sadly we only had about an hour at the bbq and could not stay for the SeaFair Parade.  Madison kept me in line and advised me I had to start saying my goodbyes so we could catch the train and make it to the airport in time to get our boarding passes and still make it to the gate on time.  Thank goodness she was there to keep us on schedule!  We made it to the gate and our plane started boarding about 15 minutes later! We settled into our seats for the long flight back to Atlanta, and I have to say I was a bit sad leaving Seattle. We had a great time with so many wonderful folks, and it was all thanks to the wonderful generosity of the allrecipes.com website!!

allrecipes.com Allstar Trip Day 4

July 27th, 2012
Friday was a very full day! We started the day early at the allrecipes.com offices.  Upon arriving at the office, we were treated to a lovely breakfast with many wonderfully delicious treats!  Once our bellies were full, we all gathered together to hear about the culture allrecipes.com creates in their everyday working environment. allrecipes.com is my kind of place! They believe in creating an all inclusive environment. They understand everyone is entitled their own point of view, and they try to maintain a respectful, non-judgmental environment. They have many different programs to keep their employees happy - such as massages in the office every other week!!  They work hard to make it an environment where people want to get out of bed in the morning and come to work! Refreshing!

Additionally, they know their stuff. They understand their product and appreciate the folks who have helped to make their site successful. They are always looking for ways to improve the site, and are very open-minded to ideas.

The staff spoiled us rotten! Not only did they fly many of the Allstar Ambassadors to Seattle (nearly 70 of us!!) and put us up in a wonderful boutique hotel, but they spent the day telling us how important WE are!!  They made the Allstars feel like ROCKSTARS!!  

I attended several workshops throughout the day that gave me insight into what makes allrecipes.com tick! I attended a Business Intelligence workshop where we learned about all the performance stats they look at each day. These stats help keep them at the top of their game and maintain their status as the #1 food site on the web!!

After the Business Intelligence workshop, I attended a Social Media Marketing workshop and learned how allrecipes.com uses Facebook, Twitter, Pinterest, Instagram, etc... to promote the site.  

We broke for lunch, and my sweet girl brought me a yummy sandwich from Piroshky Bakery.  Madison spent time at the Seattle Aquarium on Friday while I was in my workshops.  She left the aquarium in time to eat lunch with me outside the offices (in the cold - it was quite chilly on Friday).  She is such a sweetie!  

After lunch, Mads went shopping while I attended more sessions at the allrecipes.com offices.  I learned more about how the recipe submissions are analyzed and chosen for the site.  allrecipes Elizabeth filled us in on the process and was looking for our input into how they can improve the process.  It was very imformative, and many of the Allstars had great ideas!  Then I moved onto a video session where I learned about the video channels on the site.  There are many more than I knew, and I intend to utilize that feature much more as a result!  Michael K. gave a great presentation, and I'm looking forward to see the growth of the video side of allrecipes.com in the future.

Our day was coming to an end and we all gathered together again for closing remarks. Everyone received a certificate, and that's when I realized I needed to do a better job getting to know my fellow Allstars.  There were just so many of us - it was difficult to get to know everyone!  For those I did get to talk to - even for a short amount of time - I feel so much closer to. Even so I have known many of these folks for a year now online - it takes it to a whole new level getting to meet everyone in person.

At about 3:30 we all headed back to the hotel to get freshened up for the big birthday bash! We met back at the offices around 4:30 and partied for a few hours in honor of allrecipes.com 15th Birthday!!

Maria is such a sweet and beautiful person - I miss her.  She owns Century House Soaperie and makes the most wonderful handcrafted bath and body products.  She was so kind to supply each of the Allstars with their very own body lotion! Mine is lemongrass scented! I don't know how she knew - but that is one of my favorite scents!!  The lotion is so creamy and makes my skin feel so soft and wonderful!
